The history of San José de Las Casas coffee
Discovered during a trip to Nicaragua, this is one of the Peralta family’s plantations that produces some of the best coffee in Nicaragua.
When you arrive at the plantation, the view is spectacular. Of Octavio Peralta’s farms, it is the highest and the last to complete the harvest, from January until the end of April. At these altitudes, the coffee is slower to ripen, making it even more complex. It takes time to achieve its excellence.
Its uniqueness lies not only in its environment but also in the process used to refine it. It was fermented for 48 hours with its cherry and then dried in the sun. This is what brings out the notes of black fruits (blackcurrant is very present on the nose as soon as you open the bag of green coffee). Hence the color of the bag.
This is a real discovery that we are offering to share with you in a limited series, the harvest is very small.
